天然蝦仁細緻研磨
「蝦煎餅」的美味，來自於願意花費時間，讓食材本身的風味自然醞釀而成。
蝦煎餅的餅體，呈現蝦子原本自然的色澤，不刻意添加多餘色彩，淡淡的粉嫩色澤，宛如嬰兒微微泛紅的臉頰般，自然且惹人憐愛。
京都傳統蔬菜・九條蔥
九條蔥擁有其他蔥類所沒有的獨特「黏滑感」，而蔥特有的香氣與甘甜，也正是濃縮於其中。
本家佳長的堅持・米（佳長農場）
為了培育適合稻米生長的土壤，佳長自有農園「佳長農場」使用天然肥料，悉心打造健康的土壤環境。
將乾燥後約12噸的「蝦殼」與發酵後的「竹粉」，以沖繩產泡盛所製成的「もろみ酢」榨取液調和，製成天然肥料，回歸土地，滋養稻米的生長。
從食材的選擇，到土壤的培育，每一個環節都蘊含著本家佳長對自然素材與美味的堅持。
